I'm slightly in love with cilantro right now. Sprinkle it on almost anything. My friend G sent me an awesome thai soup recipe that's super tasty with lots of it. I modified it a little and make this soup probably once a week. One to pin up inside the cabinet door:


1 Qt. (3-4 cans) Veggie stock * 1 1/2 C. (one can) light coconut milk 1/2 tsp. red pepper flakes 2 tsp. grated ginger juice of 1 lemon sea salt to taste green onions, chopped cilantro, chopped

1. Bring stock to boil.

2. Add coconut milk, lemon, red pepper flakes, ginger. Reduce to simmer.

3. Simmer 15 minutes.

4. Add sea salt to taste.

5. Ladle into bowls. Add cilantro and onions as toppings.

If you want, you can also add clear noodles to give it more substance. (It's delicious.)

*can substitute chicken broth for veggie broth if you'd like.
